Chef PC is a highly accomplished Private Chef with extensive experience serving HNW and UHNW families, known for his refined, health-forward approach to pescatarian and seafood-driven cuisine. Classically trained at Le Cordon Bleu in Chicago and with a distinguished background in Michelin-starred kitchens, including the Waldorf Astoria’s Jean-Georges and Blackbird in Chicago, he combines fine-dining technique with a thoughtful, wellness-focused philosophy. His culinary foundation as a Sushi Chef at Nobu Malibu further deepens his expertise in seafood preparation, allowing him to craft elegant, nutrient-rich menus centered around fresh fish, seasonal vegetables, and globally inspired flavors. Fluent in English, Japanese, Spanish, and Vietnamese, he brings a naturally international perspective to his cooking, drawing on Japanese, Mediterranean, Vietnamese, and European influences to create vibrant pescatarian meals tailored to each client’s tastes and dietary goals. In his private chef roles for prominent families, professional athletes, and VIP clientele—including a former U.S. President—he has developed customized meal plans, sourced the highest quality organic ingredients from local farmers’ markets, and prepared daily meals ranging from refined seafood dishes to family-style and child-friendly options. With a passion for clean, seasonal ingredients and sustainable cooking, he specializes in bespoke pescatarian menus, specialty diets, and wellness-oriented cuisine designed to support both flavor and lifestyle.
